LEMON PUDDING

Ingredients

  • 1/2 cup honey
  • 1 tblsp butter, room temperature
  • 3 tblsp flour
  • 1/3 cup fresh lemon juice
  • 2 tsp finely grated lemon peel
  • 2 eggs, separated
  • 1 cup milk
  • 1/8 tsp salt

Preparation

Step 1

Preheat oven to 325. Lightly grease 1 quart baking dish. Beat together honey and butter. Add flour, lemon juice and peel. Beat in yolks, then add milk and salt and stir until well blended. Beat egg whites until stiff peaks form. Fold into lemon mixture. Turn into baking dish and set in shallow pan of hot water. Bake until set, about 4 minutes.
