Ingredients
- 1 pound red potatoes, sliced very thin
- 6 tablespoons olive oil
- 1/2 small red onion, sliced thin
- 1/2 teaspoon fresh rosemary
- 1 cup crumbled goat cheese
- salt and pepper
- flour, for dusting board
- 1 recipe pizza dough
Preparation
Step 1
1. Heat oven to 500.
2. Toss potatoes with 1 tbsp oil in microwave-safe bowl. Cover tightly and microwave on high power until potatoes are just tender, 3-7 minutes.
3. Combine 2 tbsp oil, onion, rosemary, cheese, s&p. Brush 2 tbsp oil over rimmed baking sheet. Roll dough into a 16x9" oval and transfer to baking sheet.
4. Scatter potatoes on top, then onions. Drizzle with remaining tbsp oil and season.
5. Bake until onions are soft and edges of dough are well-browned; about 15 minutes.
This was fabulous, but I lightened considerably - used only 1/2 tbsp oil with the potatoes, left out the oil on the baking sheet (just sprayed) and didn't sprinkle any on over the pizza. Definite repeater.
