Shish Tawook with Garlic Sauce

Ingredients

  • For Shish Tawook:
  • 2 boneless chicken breasts
  • 3 cloves minced garlic
  • 1/2 tablespoons tomato paste
  • 2 tablespoons ketchup
  • 1/4 cup Mediterranean or Greek yogurt
  • 1/4 cup lemon juice
  • 1 teaspoon paprika
  • olive oil for cooking
  • For Garlic Sauce:
  • 4 cloves garlic minced with 1/4 teaspoon salt
  • 1 cup canola oil
  • 1/8 cup lemon juice
  • 1 egg white

Preparation

Step 1

Shish Tawook:
Add all ingredients except olive oil. Cover and let marinate in refrigerator for 2-3 hours. Heat pan to medium/high heat, add olive oil, then add chicken. Cook uncovered on each side until chicken is cook through.

Garlic Sauce:
In a food processor, add garlic minced with salt. Begin processor and slowly add oil and lemon juice, alternating them until gone. Scrape down sides intermittently. Add one to two egg whites while processor is blending until you have reached mayonnaise consistency. Serve with chicken or meat, refrigerating remainder. Lasts about 1 week in the refrigerator. (I had a difficult time getting this recips to "gel" together. I finally used an immersion blender and it was great.)
