Ingredients

  • 2 cups red potatoes, cubed & peeled
  • 2 leeks, chopped
  • water to cover leeks
  • 2-3 bouillon cubes (chicken or vegetable)
  • 1/4 cup low fat milk

Preparation

Step 1

Place potatoes and leeks in a 2 quart saucepan. Cover with water. Bring to a boil; reduce heat to medium and cook until tender. Add all ingredients into blender. Start on low speed and then turn to high. Blend for 4 minutes until blended.

*It is necessary to cook potatoes and leeks on stove top before placing in blender.
