cups red potatoes, cubed & peeled
water to cover leeks
bouillon cubes (chicken or vegetable)
cup low fat milk
Place potatoes and leeks in a 2 quart saucepan. Cover with water. Bring to a boil; reduce heat to medium and cook until tender. Add all ingredients into blender. Start on low speed and then turn to high. Blend for 4 minutes until blended. *It is necessary to cook potatoes and leeks on stove top before placing in blender.
