Peppermint Cheesecake

Ingredients

  • 1 cup chocolate wafer cookie crumbs
  • 3 tablespoons melted butter
  • 1 envelope unflavored gelatin
  • 1/4 cup cold water
  • 16 ounces neufchatel cheese
  • 1/2 cup sugar
  • 1/2 cup milk
  • 1/4 cup peppermint mints, crushed
  • 1 cup whipping cream, whipped
  • 2 chocolate candy bars, chopped

Preparation

Step 1

1. Heat oven to 350.

2. Mix crumbs and butter, press into bottom of 9" springform pan. Bake 10 mins. Cool.

3. Soften gelatin in water. Stir over high heat until dissolved.

4. Beat cheese and sugar. Add gelatin, milk, and candy. Chill. Fold in cream and chocolate. Pour into crust.

5. Chill until firm.
