Ingredients

  • 350 * 350- g pkg cheese or meat tortellini
  • 1 each * 1 each yellow and red pepper
  • 8 * 8- oz (225- g) pkg sliced button mushrooms
  • 1 * 1 tbsp (15 mL) Indian curry paste, preferably mild
  • 300 * 300- ml container alfredo sauce, about 11/4 cups
  • * Chopped cilantro (optional)

Step 1

1. Cook pasta following package directions. Meanwhile, slice peppers into thin strips. Lightly coat a large frying pan with oil and set over medium heat. Add mushrooms. Cook, stirring occasionally, until light brown around edges, 2 to 3 min.

2. Add peppers and stir in curry paste. Stir often until peppers are tender-crisp, about 2 min. Add alfredo sauce and stir until warm, 2 min. Drain pasta well. Stir into sauce. Sprinkle with cilantro.
