Ingredients

  • 2 cups + 2 T. flour
  • 1 1/2 tsp. baking soda
  • 1/2 tsp salt
  • 1 T. ground cinnamon
  • 1/2 tsp. ground ginger
  • 1/4 tsp. ground cloves
  • 12 T. unsalted butter
  • 2/3 Cup sugar
  • 1/2 tsp. vanilla extract
  • 1/4 cup honey
  • 1 large egg
  • Extra sugar and ground sugar for dusting

Preparation

Step 1

1. Sift together the flour, baking soda, salt, and spices. Set aside.
2. Beat butter and sugar together until light and fluffy. Add honey, egg and vanilla extract. Beat for another minute until weel incorporated scraping down the bowl half way through.
3. Slowly add dry ingredients and mix until incorporated and smooth.
4. Lightly flour a work surface and divide the dough into 2 parts. Lightly roll them into logs. Wrap in plastic wrap and freeze.
5. Preheat oven to 350 degrees and line 2 baking sheets with parchment paper or silicone mats. In a small bowl, mix cinnamon and sugar (1/4 c. sugar and 1 tsp. cinnamon).
6. Slice the dough into 1/4 inch rounds with a very sharp knife. Press each round into cinnamon sugar. Place rounds sugar side up with lots of room for spread.
7. Bake for 10 - 13 minutes or until a dark golden brown. Check at 10 minutes. These burn fast!!!!
8. Let cool slightly out of oven then transfer to a rack to cool.
