Roasted Rosemary Potatoes

Ingredients

  • 2 1/2 tblsp unsalted butter, melted
  • 2 baking potatoes, scrubbed and cut into 1/4-inch slices
  • coarse sea salt
  • 1/2 tsp crumbled dried rosemary
  • freshly ground black pepper

Preparation

Step 1

Preheat oven to 425F.
In an 8-inch baking pan, pour half the butter, covering the entire bottom. Layer potatoes in the pan in separate rows, overlapping potatoes slightly. Sprinkle with salt, rosemary and pepper. Pour remaining butter on the potatoes. Bake for 45 minutes – 1 hour, or until crisp and golden, turning rows once. Sprinkle with additional salt, to taste.
