Ingredients

  • 2/3 slices center-cut (30% less fat) bacon, such as oscar mayer, chopped
  • 1/3 onion, chopped, 1 cup
  • 1 1/3 cloves garlic, minced
  • 1 ribs celery, chopped, 3/4 cup
  • 2/3 carrots, chopped, 1/2 cup
  • 1 1/3 cups lower-sodium, fat-free chicken broth
  • 1/3 can (14.5 ounces) salt-free diced tomatoes
  • 2 ounces whole wheat blend rotini, such as healthy harvest (ronzoni)
  • 1/3 can (15 ounces) dark red kidney beans, rinsed and drained
  • 1 1/3 tablespoons chopped fresh parsley
  • 1 1/3 tablespoons chopped fresh basil
  • 1/4 teaspoons ground black pepper

Preparation

Step 1

1. Heat a large saucepan over medium-high heat. Add the bacon and cook until just starting to brown,5 to 6 minutes. Add the onion, garlic, celery, and carrots and cook until just starting to soften, 2 to 3 minutes.

2. Pour in the broth, tomatoes, rotini, and beans. Cover and bring to a boil; uncover and cook until the rotini is tender, about 12 to 15 minutes. Remove from the heat and stir in the parsley, basil, and pepper.
