Crispy Ritz Chicken

Ingredients

  • 2 chicken breasts cut into strips
  • 1 sleeve Ritz Crackers
  • Egg and milk, beaten together
  • 1 cup shredded cheese
  • Salt and pepper to taste
  • Spray butter

Preparation

Step 1

Line a large baking sheet with non-stick foil. Grind Ritz Crackers into fine crumbs in a food processor; mix with salt and pepper to taste. Line up the egg/milk mixture, shredded cheese and Ritz crackers.

Dip the breasts into the egg/milk mixture. Then roll into shredded cheese, pressing the cheese onto the chicken. Cover with the cracker crumbs. Place on the baking sheet. Spray chicken with butter.

Bake in a 350 degree oven for 15-30 minutes, turning chicken over about halfway and spraying with the butter again.
