Pork, Squash, and White Bean Soup

Ingredients

  • 10 oz ground pork
  • 1 1/4 c cannellini beans
  • 3 cloves garlic, minced
  • 2 oz lacinato kale, chopped
  • 1 butternut squash, peel and chop
  • 2 T lemon juice
  • 1 red onion, dice
  • 1 bunch sage

Details

Preparation

Step 1

1) season and brown meat in a large pot
2) saute squash for 7 minutes until lightly browned and slightly tender.
3) Add onion and garlic and cook until soft
4) Add the kale and cook 2 minutes until wilted
5) Add beans and 3 cups of water and bring to boil. Then reduce to medium-high and simmer for 7 minutes.
6) stir in lemon juice
