Ingredients

  • 2 teaspoons olive oil
  • 4 beef sirloin steaks, trimmed
  • 1 cup sliced onion
  • 1 cup chopped carrot
  • 2/3 cup barbecue sauce
  • 6 ounces canned crushed pineapple, in juice
  • 1 cup snow peas

Preparation

Step 1

Heat the oil in a large skillet over medium-high heat; brown steaks on both sides. (You’re not cooking them through, just sealing in the juices.) Transfer to a slow cooker. In the same skillet, saute onion and carrot until onion is translucent; place over steaks in the slow cooker. Combine barbeque sauce with pineapple and juice; pour over steaks and veggies. Cover and cook on LOW for 6 to 8 hours. 30 minutes before serving, add snow peas; blend well and cook until heated through. Serve.

SERVING SUGGESTION: Brown rice and steamed broccoli.
GLUTEN FREE: Make sure barbecue sauce and pineapple are gluten free.
