- Scant 1 cup sugar
- 1/4 cup cocoa powder
- 2 1/2 tablespoons all-purpose flour
- Pinch of salt
- 1 1/2 cups whole milk
- 1/8 teaspoon vanilla extract
- 1 tablespoon butter
In a 1-qt non-stick saucepan, whisk together the sugar, cocoa, flour, and salt. Whisk in 1 cup of the milk until smooth; whisk in remaining 1/2 cup milk.
Bring up to a slight bubble over medium-high heat, whisking constantly, then reduce heat to medium and cook until mixture thickens to the consistency of gravy, whisking constantly so it doesn't scorch. Remove from heat and whisk in the vanilla and butter.
Serve warm over hot, buttered biscuits, vanilla pound cake, angel food cake, or vanilla ice cream.
