Ingredients
- 1/4 lb thick cut bacon, cut into 1/2 inch pieces
- 8 chicken breasts
- salt and pepper
- flour
- 1 tbsp olive oil
- 1 12 oz bottle beer (brown ale)
- 3/4 lb small red potatoes, halved
- 2 tbsp whole grain mustard
- 2 tbsp brown sugar
- 4 sprigs thyme
- 3 tbsp chopped parsley
Preparation
Step 1
Heat a large pot over medium. Add bacon and cook until browned, 5 minutes. remove with a slotted spoon and transfer to a paper towel.
Season chicken with salt and pepper. Dredge in flour. Add olive oil to drippings in the pot. Add chicken in batches and cook over medium heat until golden on the bottom, 6-7 minutes. Flip and sear other side, 1-2 minutes.
Add beer, potatoes, mustard, sugar, thyme and 1 cup water to the pot, and stir, making sure the chicken is fully submerged.
Simmer until chicken is cooked thru, 10-15 minutes. Discard thyme, stir in bacon and parsley.
