Ingredients
- 3 cups water
- 1 tablespoon salt
- Juice of 1/2 lemon
- 1 pound fresh asparagus trimmed
- 1 teaspoon olive oil
- 4 halibut filets - (6 to 7 oz ea)

Step 1
For Asparagus: Over high heat, bring bring water and a pinch of salt to a boil. Add asparagus and boil for 2 minutes (water should just cover asparagus). Remove asparagus from water and set aside.
For Halibut: In a medium saucepan over high heat, bring water, salt and lemon juice to a boil. Next, place halibut filets in boiling water and turn heat down to medium. Poach for 7 to 8 minutes. Remove from water, drain, place on serving plates and top with cooked asparagus. Drizzle lightly with olive oil and serve.
