Pasta With Skate In Tomato-Basil Sauce

Ingredients
- 1 pound pan-ready skate fillets cut 1" by 2" pieces
- 2 tablespoons olive oil
- 1 cup chopped onion
- 1 teaspoon minced fresh garlic
- 4 cups chopped seeded tomatoes
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon freshly-ground black pepper
- 1/3 cup red wine
- 1/4 cup minced fresh basil leaves
- 1 pound pasta

Preparation
Step 1
In a large skillet, sauté onions and garlic in olive oil. Stir in tomatoes, dried basil, salt and pepper and simmer for 15 minutes.
Stir in skate and wine, and simmer for 3 minutes or until skate flakes easily when tested with a fork. Add fresh basil to sauce and serve over hot pasta.
This recipe yields 4 servings.
Variations: Other fish and shellfish such as mussels, monkfish, or shrimp, can be teamed up with skate.
