Chocolate & Candy Cane Buttercream Cookies

Ingredients

  • 3/4 c softened butter
  • 1 c sugar
  • 1 egg- room temp
  • 1 1/2 t pure peppermint extract
  • 2 c flour
  • 1/2 t salt
  • 1/2 t baking powder
  • 2 c dark chocolate chunks
  • 5 crushed candy canes
  • Powdered sugar for dusting or melted chocolate for drizzling when cooled

Preparation

Step 1

Pre-heat oven 350F. Mix first 4 ingredients together in mixer. Combine flour, salt, baking soda together in separate bowl. Then slowly add flour mixture to butter mixture in mixer. Fold in chocolate chunks and candy canes last. Drop 1-2 teaspoon size dough onto ungreased cookie sheet (I use parchment paper on cookie sheet). Bake 9-11 minutes. Dust with powdered sugar or drizzle with melted chocolate when cookies cool.
