Corn Cakes with Chives

Ingredients
- 2 T all purpose flour
- 1 1/2 t baking powder
- 1 t sugar
- 1/2 t salt
- 1 c boiling water
- 1 c yellow corn meal
- 1/4 c milk
- 1/2 c whole kernel corn
- 1 slightly beaten egg
- 1 T snipped fresh chives
- 3 T cooking oil
- 1 r snipped fresh chives or cilantro (optional)
- 1/3 c sour cream

Preparation
Step 1
In a small bowl combine flour, baking powder, sugar and salt; set aside.
In a med bowl stir boiling water into cornmeal to make a stiff mush. Stir in milk until smooth. Stir in corn, egg and the 1 T chives. Add flour mixture to cornmeal mixture and stir until combined.
In a large skillet heat 2 T of the oil over med heat. Drop half of the batter by rounded tablespoons into hot oil, making 6 cakes. Cook for 3-4 min or until golden brown, turning once. Repeat with remaining batter for 12 cakes.
Meanwhile if desired, stir the 1 t chives into sour cream; serve with corn cakes. If desired sprinkle with additional chives or cilantro.
