Pickled Jalapeno Dressing

A bold dressing that benefits from the use of olive oil. It's perfect over cool steamed cauliflower or potatoes, sliced tomatoes or romaine tossed with slivered ham, thin-sliced onion and roasted peppers.

Ingredients

  • 3/4 cup vegetable oil olive oil or a mixture of the two
  • 1/4 cup apple cider vinegar
  • 1 canned pickled jalapeno, stemmed
  • 1 tablespoon jalapeno pickling juice
  • Salt

Preparation

Step 1

Combine the oil, vinegar, pickled jalapeno, pickling juice and a scant teaspoon salt in a blender jar or food processor. Process until smooth. Taste and season highly with additional salt if appropriate. Pour into a jar, secure the lid and refrigerate until ready to use. Shake well immediately before use.
