Salsa Pork Tenderloin and Rice

  • 1 pork tenderloin (about 1 lb)
  • 2 tbs canola oil, divided
  • 1 tsp total seasoning
  • 1 tsp smoked paprika
  • 2 cups fresh salsa
  • 2 (8.8 oz) pouches precooked brown rice
  • 1 avocado
  • 2 tbs fresh cilantro, coarsely chopped
  • 1/4 cup sour cream

Step 1

cut pork into bite size pieces (wash hands). preheat large saute pan on medium high 2-3 mins. coat pork with 1 tbsp oil, seasoning and paprika. place remaining 1 tbsp oil in pan, then add pork, cook and stir 2-3 mins or until browned on all sides.

add salsa to pork; cook and stir 2-3 mins. reduce heat to simmer, cook and stir 5-6 mins or until pork is 145 degrees and sauce has reduced by about one half.

cook rice following package instructions for microwave. cut avocado into bite size pieces; chop cilantro. serve pork over rice and top with avocado, sour cream and cilantro.
