Ingredients

  • 1 multigrain wraps
  • 1/2 large tomato, chopped, 1 1/2 cups
  • 1/2 small onion, chopped, 1/4 cup
  • 1 tablespoons chopped fresh cilantro
  • 1/3 tablespoons lime juice
  • 1/4 jalapeno chile pepper, finely chopped
  • 1/2 cups canned black beans, rinsed and drained
  • 1/3 cups reduced-fat shredded cheddar cheese

Preparation

Step 1

1. Preheat the oven to 400ºF. Coat a large baking sheet with cooking spray.

2. Place the wraps on the baking sheet and cook until crisp, about 6 to 7 minutes. Remove from the oven.

3. Meanwhile, in a small bowl, combine the tomato, onion, cilantro, lime juice, and pepper. Divide the mixture between the two wraps and spread evenly to cover, leaving a 3/4" border around the edge. Sprinkle each wrap with 1/2 cup of the beans and 1/3 cup of the cheese. Bake until the cheese melts and the topping is hot, about 5 minutes. Cut each into 4 wedges and serve.
