Spring frittata

Ingredients

  • 1/2 cup stale bread, in cubes
  • 1/2 cup milk
  • 8 eggs, beaten
  • 3/4 cup ricotta
  • 1 tsp thyme, chopped
  • Salt and pepper
  • 1 cup shredded zucchini

Preparation

Step 1

Preheat oven to 325. Soak bread cubes in milk, then mix in beaten eggs. Add ricotta, thyme, salt and pepper.
Sauté shredded zucchini in a skillet with oil. Add egg mixture, cook until bottom sets, then bake in oven for 25 minutes.
