Oven Fried Chicken

Ingredients

  • 1 beaten egg
  • 3 T milk
  • 1 1/4 c finely crushed saltine crackers or rich round crackers (about 35)
  • 1 t dried thyme, crushed
  • 1/2 t paprika
  • 1/8 t black pepper
  • 2 1/2 - 3 lb meaty chicken pieces(breast halves, thighs, and legs)
  • 2 T butter or margarine, melted

Preparation

Step 1

In a small bowl combine egg and milk. In a shallow dish combine crushed crackers, thyme, paprika, and pepper. Set aside. Skin chicken. Dip chicken pieces, 1 at a time, into egg mixture; coat with crumb mixture.

In a greased 15x10x1 baking pan, arrange the chicken, bone side down, so the pieces aren't touching. Drizzle chicken with melted butter.

Bake, uncovered, in a 375 oven for 45-55 min or until chicken is no longer pink. Do not turn chicken pieces while baking.
