Patrice's Pineapple Casserole

While pineapple and cheddar sounds like a strange combination, everyone always loves this casserole and it's usually the first thing gone at a potluck! This dish is my attempt at duplicating my friend Patrice's casserole.

Ingredients

  • 1 20 oz. can pineapple tidbits, drained
  • 3 T reserved pineapple juice can
  • 1/2 c. sugar
  • 3 T flour
  • 1 heaping cup finely shredded cheddar cheese
  • 1 stick of butter (1/2 c.), melted
  • 1 c. Ritz cracker crumbs

Preparation

Step 1

1. Preheat the oven to 375F.
2. Spray a casserole dish with non-stick spray. Add the drained pineapple.
3. Mix the flour and sugar in a small bowl. Add the reserved pineapple juice and mix well.
4. Pour the flour, sugar, & juice mixture over the pineapple and mix well.
5. Stir in the cheese until well blended.
6. In a small bowl, combine the cracker crumbs and melted butter. Spread over the top of the pineapple mixture.
7. Bake 20 minutes, or until crumbs are browned and casserole is bubbly. If casserole isn't browning, place under the broiler for 1-2 min.
