- 2 cups All-Purpose flour
- 1 tablespoon baking powder
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1 1/2 cups plus 1 tablespoon heavy cream
- 2 tablespoons unsalted butter
- 8 eggs
- 4 ounces thinly sliced Cheddar cheese
- 8 thin Virginia ham slices

Step 1
Preheat oven to 425 F. Line a quarter-sheet pan with parchment paper.
*For Biscuits:*
In a bowl, sift together the flour, baking powder, sugar and salt. Add the 1 1/2 cups cream and stir until just combined. Turn the dough onto a floured surface. Taking care not to overhandle the dough, pat it into a square, then roll out into an 8-inch square. Transfer to the prepared sheet pan and brush the tops with the 1 tablespoon cream.
Bake until the biscuits are golden brown on top, 15 - 19 minutes. Transfer the biscuits to a wire rack and let cool completely.
*For Panini:*
Preheat an electric panini press on medium-high heat.
In a French skillet or fry pan over medium heat, melt the butter. Break the eggs into the pan and fry, turning once, until the yolks are almost set, about 1 minute per side.
Cut each biscuit in half horizontally. Lay the halves, cut side up, on a work surface. For each sandwich, place 1/2 ounce cheese on the bottom half of biscuit, the top with 2 fried eggs, 2 slices of ham and 1/2 ounce cheese. Cover with top half of biscuit.
Place 2 of the sandwiches on the preheated panini press and cook until cheese is melted, 3 - 4 minutes. Transfer to a plate. Repeat with remaining sandwiches. Serve immediately.
