Ingredients
- Left Over Turkey Carcass (bones, skin and everything)
- 8 cups of water
- 3 chicken bouillon cubes
- 1 tsp salt
- 1/4 tsp poultry seasoning or sage
- 1 bay leaf
- 1/2 cup barley
- 2 cups chopped carrots
- 1 cup chopped onion
- 1 cup chopped celery
- 28 oz can tomatoes
- 3 cups chopped turkey
- 1 cup macaroni or noddles uncooked (optional)
- 1/4 cup chopped fresh parsely
Preparation
Step 1
n a large dutch oven, combine turkey carcass, water, bouillon cubes, salt, poultry seasoning and bay leaf. Bring to a boil, reduce heat and cover and simmer for 2 hours.
Strain and discard bones. Place broth in refregerator overnight. Skim fat off solidified broth.
Simmer dutch oven with remaining ingredients fro 2-3 hours.
Serve with fresh bread and a green salad.
