Ingredients
- 2 1/3 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/4 tsp salt
- 1 cup butter
- 1/2 cup sugar
- 1/2 cup light corn syrup
- 2 egg yolks
- 2 egg whites
- 2 cups finely chopped pecans
- candied cherries, halved
Preparation
Step 1
Stir together flour, cocoa powder, and salt.
In mixer bowl, beat butter on medium speed for 30 seconds. Add sugar and beat til fluffy. Stir in corn syrup and egg yolks, beat til well blended.
Add dry ingredients to beaten mixture and beat til well blended. Cover and chill 2-3 hours for easier handling.
Using 1 Tbs dough for each, shape into 1-inch balls.
Beat egg whites til soft peaks begin to form (tips curl over). Dip balls in egg whites, roll in nuts and place on greased cookie sheet. Press a candied cherry half in the center of each ball.
Bake in a 325 oven 18-20 minutes or til done. Remove to wire rack and cool.
