Sweet Zucchini Pickles

Ingredients

  • 1 gallon Water
  • 1 Gallon baby zucchini
  • 1 quart vinegar
  • 5 Cups Sugar
  • 1 cup hydrated lime
  • 2 Tbls Pickling spices
  • 1 Tbls Salt
  • 1 Tsp Celery Seed
  • green food coloring

Preparation

Step 1

Peel and remove seeds, cut into pieces like french fries.

Measure 1 gallon vegetables (combine water and lime) - pour over vegetables and let stand overnight

Next Day
Drain and rinse till water is clear - Soak 3 hours in Ice bath then drain.

Bring vinegare, sugar, salt and spices (tie spices in a bag) to a boil.

cover drained vegetables with boiled hot brine. Soak overnight

Next day

Drain brine and heat to a boil and in vegetables and simmer 30 and add food coloring 18-20 drops - Pack in hot jars and seal in hot water bath for 20 minutes.
