Ingredients
- 1 whole chicken cut in serving pieces
- Salt, pepper to taste
- 2 tbsp. olive oil
- 1 cup chopped onion
- 2 tsp. minced garlic
- 1/2 tsp. loosely packed thread saffron
- 1 tbsp. flour
- 1/2 cup dry white wine
- 1 1/2 cup chicken broth
- 2 cup chopped red pepper
- 1 1/2 cu[p chopped tomatoes, or canned
- 1 tbsp. tomato paste
- 40 pitted green olives
- 1 tsp. dried rosemary leaves
- 1 bay leaf
- 2 small zucchini, cut into 1/2" rounds

Step 1
Heat oil in skillet, salt/pepper and fry chicken skin side down. Brown on all sides, cooking most of the way. Discard fat, saute onion, garlic, saffron about 1 min. Sprinkle with flour, stir to coat the pieces. Add wine, broth, chopped pepper and tomato. Stir in tomato paste, olives, rosemary, bay leaf. Cover and cook 5 min., add zucchini, cook 5 min. more. Uncover and cook 5 min. more. Serve.
