Pete's Black Bean

Ingredients

  • 2 Tbps. olive oil
  • 1 large onion, chopped
  • 8 + garlic cloves, smashed & chopped
  • 2 cans black beans (1 spicy) (14.5 oz cans each)
  • 1 can (15 oz) fire roasted tomatoes
  • 2-3 Tbps. smoked paprika
  • 2-3 Tbps. vinegar
  • 1/2 tsp. chipotle
  • 1 bay leaf
  • 2 Tbps. fresh cumin

Preparation

Step 1

Pour the 1-2 Tbps. of olive oil in the pan. Cook the onions and garlic over medium-low heat until soft (3-5) minutes. Add the remaining ingredients and cook on medium-low to low heat for about an hour.

Serve over white rice.
