Ingredients
- 2 Tbps. olive oil
- 1 large onion, chopped
- 8 + garlic cloves, smashed & chopped
- 2 cans black beans (1 spicy) (14.5 oz cans each)
- 1 can (15 oz) fire roasted tomatoes
- 2-3 Tbps. smoked paprika
- 2-3 Tbps. vinegar
- 1/2 tsp. chipotle
- 1 bay leaf
- 2 Tbps. fresh cumin
Preparation
Step 1
Pour the 1-2 Tbps. of olive oil in the pan. Cook the onions and garlic over medium-low heat until soft (3-5) minutes. Add the remaining ingredients and cook on medium-low to low heat for about an hour.
Serve over white rice.
