Whole Grilled Red Snappers

Prepare the snapper recipe. lay out the salads, slaws & biscuits. After dinner, gather round the grill w/graham crackers & a few dark chocolate bars, toast marshmallows over the embers & build your own s'mores. Isn't summer grand?

Ingredients
- 4 small whole red snappers (~1.25lbs each), gutted, scaled & gills removed
- 1/4 c light (reduced-sodium) soy sauce
- 2 T EVOO, plus more for drizzling on the cooked fish
- Juice of 1 lemon
- Coarse sea salt (such as Maldon)
- 10 scallions, white & light green part only
Preparation
Step 1
Prepare a charcoal or gas grill for med-high heat cooking. Cut 3 deep slashes on each side of each fish. Combine soy sauce, oil & lemon juice in a small bowl & drizzle it over & inside each fish. Sprinkle fish inside & out w/sea salt. Split 8 of the scallions lengthwise, & insert 4 pieces in the cavity of each fish.
Place fish on grill rack, close grill & cook, turning fish once, until skin is browned and flesh flakes easily when pressed w/a fork, 8-10 min. Transfer to plates chop remaining scallions & sprinkle them on top, drizzle fish w/more EVOO & sprinkle w/more salt.
