Ingredients

  • 2 tablespoons of butter
  • ½ tsp vanilla
  • 1 tablespoon + ¼ c sugar
  • 2 tablespoons ground hazelnut
  • 9 oz milk chocolate chips
  • ½ c flour
  • 1 c milk
  • 1 pinch salt
  • 4 eggs (separated)
  • ¼ tsp cream of tartar

Preparation

Step 1

1. Melt butter, vanilla and 1 tablespoon sugar in a double boiler – after the butter has fully melted take it off the double boiler, add 3 oz of milk chocolate chips to this mixture and let the heat of the butter and sugar melt the chocolate. Once the chocolate is melted add the hazelnuts. Place in the freezer to harden.
2. Mix the flour milk and salt over a double boiler.
3. Add yolks one at a time to the milk and flour – beat after each addition. After all the eggs have been added continue mixing until the consistency becomes that of mayo then add 6 oz of chocolate.
4. To the 4 egg whites add the ¼ tsp cream of tartar and ¼ c sugar; Mix until the eggs form stiff white peaks.
5. Fold in 1/3 of the whites into the flour batter – mix together slowly and lightly.
6. Butter and lightly sugar 6 ramekins – put the frozen chocolate/hazelnut mix into the middle of each ramekin and then pour the batter over top.
7. Place ramekins in a baking sheet and fill the about ½ way with boiling water. Bake at 375 for 30 mins.
