Ingredients

  • 4 boneless, skinless chicken breast halves
  • 1/2 cup Italian seasoned bread crumbs
  • 2 tbsp grated parmesan cheese
  • 1/2 tsp garlic powder
  • 1 egg, beaten with 2 tbsp water
  • 2 tbsp olive oil
  • 1/2 cup meatless red pasta sauce
  • 4 slices provel or mozzarella cheese

Step 1

Pound chicken between sheets of plastic wrap to 1/2 inch thickness. On sheet of waxed paper, combin crumbs, parmesan, and garlic powder. Dip chicken into egg mixture, then coat with crumbs. Heat oil in large nonstick skillet over medium heat. Add breaded chicken and cook for 3 to 4 minutes per side or until browned and juices run clear. Place cooked chicken on rack of broiler pan. Top each piece with 2 tbsp sauce and 1 slice of cheese. Broil 6 inches from heat source for 1 to 2 minutes, or until cheese is melted and slightly browned
