Ham, Pepper and Onion Muffins

Ingredients

  • 1/4 cup butter or margarine
  • 3/4 cup finely chopped onions
  • 3/4 cup finely chopped ham
  • 2 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tbsp baking powder
  • 1 tsp coarsely ground black pepper
  • 1/2 tsp salt
  • 1 cup milk
  • 1 large egg

Preparation

Step 1

Preheat oven to 400° F (200° C) Muffin tin, greased or paper-lined

1. In a frying pan heat butter over medium-high heat. Add onions; cook for about 2 minutes. Set aside.
2. In a bowl combine ham, flour, sugar, baking powder, pepper and salt; blend well.
3. In another bowl combine milk, egg and onions. Add to flour mixture; stir just until moist.
4. Spoon batter into prepared muffin tin, dividing evenly. Bake in preheated oven for 20 to 25 minutes.
