Mom's Meatloaf in Acorn Squash

Ingredients

  • 3 slices bacon
  • 1/2 onion. minced
  • 2 cloves garlic, minced
  • 1/2 lb ground beef
  • 1 egg
  • 1 C grated cheddar cheese
  • 1/4 C Parmesan cheese powder
  • 2 T ketchup
  • 1/2 t salt
  • 1/8 t pepper
  • pinch nutmeg
  • 1 Acorn squash
  • 2 T olive oil
  • 1 T flour

Preparation

Step 1

Heat oven to 375*. Saute bacon, remove from heat and cool. In grease, sauté onion and garlic until golden.
Mix bacon and onion mixture with ground beef, egg, cheeses, ketchup, salt,pepper and nutmeg. Adjust seasoning as needed.
Microwave whole squash 2 min on high, Cut off top cap and scrape out seeds.
Flatten bottom by slicing off piece. Cut into flesh inside, but don't pierce skin. Brush inside and out with olive oil and dust inside with flour
Stuff squash with meatloaf mix and place cap back on it. Bake 45min and then remove cap and bake additional 10 min. Serve while hot. Cut squash into slices like an orange.
