Brown-sugar-baked bacon

Once you cook bacon in oven, you’ll never go back to the frying pan! Our baked bacon recipe comes with a dusting of black pepper and brown sugar to make mornings extra special.

Ingredients
- 2 375-g pkgs thick-cut bacon, about 16 slices
- 2/3 cup brown sugar
Preparation
Step 1
Position racks in top and bottom thirds of oven. Preheat to 375 F. Line 2 baking sheets with foil, then top each with a wire rack.
Pat bacon dry with paper towels. Press sugar onto both sides of bacon. Arrange in a single layer, overlapping slightly if needed, across each rack. Season lightly with fresh pepper.
Bake in top and bottom thirds of oven, switching sheets and flipping halfway through, until cooked through and dark golden, 35 to 40 min. Gently loosen bacon from racks, then let stand 5 min before serving.
Make-ahead: Place bacon on pans the night before and refrigerate; add sugar in the morning.
