Easter Ham
Another collected recipe. This time, it's from the mother of all homemakers: Martha Stewart
- 10
Ingredients
- 1 (7 to 9 lb ham)
- Whole cloves
- 1 pound dark brown sugar
- 1 (12 oz) can of Coca-Cola
- 1 (14 oz) can pineapple rings (drained and juice reserved)
- 1 cup sweet concord grape wine (Manishevitz)
- 10 to 12 maraschino cherries
- Fresh bay leaves, optional
Preparation
Step 1
Preheat the oven to 325 degrees.
Using a sharp knife, score the surface of the ham crosswise and lengthwise, forming a crosshatch patter about 1/4 inch deep and 1 inch apart. Place a clove in the center of each square.
Place ham in a double layer disposable aluminum roasting pan. Pat brown sugar onto the surface of the ham (some with fall into the pan.) Transfer to the oven and bake until the brown sugar just begins to melt, about 30 minutes.
Remove ham from the oven and pour the cola over the ham, letting it mix with the melted sugar in the bottom of the pan. Baste the ham with the sugar mixture. Return to the oven and bake for 20 minutes. Meanwhile, combine 1 cup reserved pineapple juice and the wine in a small bowl. Baste the ham with the pineapple mixture. Bake ham for a total of 16 minutes per pound, basting every 20 minutes with the juices in the pan. During the last 20 minutes, decorate ham with the pineapple rings, using toothpicks to hold in place, in the center of each pineapple ring, place a cherry, again adhering with a toothpick.
Once the ham is done, transfer to a plater, remove all toothpicks. Garnish with fresh bay leaves (is using) and serve.
