Chicken Italiana

Nice with spaghetti and Parmesan cheese and side veg.

Ingredients

  • 1 medium red onion, peeled and finely chopped
  • 2 garlic cloves, minced
  • 1 medium tomato, finely chopped
  • 170 g / 6 oz mushrooms, finely chopped
  • 390 g can artichoke hearts, quartered
  • 600 g chicken breasts, sliced into large slices
  • Pinch of dried chilli (optional)

Preparation

Step 1

Preheat oven to 200 degrees C.

Heat a frying pan until fairly hot, spray with cooking spray and add onion, garlic, tomato and mushrooms. Stir fry for 3 minutes to soften.

Arrange the artichokes in an ovenproof dish. Lay the chicken fillets on top and season, sprinkling over the chilli, if using.

Spoon over the hot onion and mushroom mixture and cover the dish tightly with foil. Place in the oven and cook for 45 minutes. Check that chicken is cooked through by skewering through and checking that the juices run clear.

Serve hot alongside spagetti and a side vegetable.
