Brussels Sprouts and Fingerling Potatoes

Ingredients

  • 2 pounds brussels sprouts, trimmed and halved
  • 1 pound fingerling potatoes, halved lengthwise
  • 2 tablespoons olive oil
  • 1 1/4 teaspoons chopped fresh thyme
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3/4 cup cooked, chopped bacon

Preparation

Step 1

1. Heat oven to 400 degrees F. Coat a large rimmed baking sheet with nonstick cooking spray. 2. Toss together Brussels sprouts, potatoes, oil, thyme, salt and pepper. Pour onto prepared pan; Roast at 400 degrees for 25 minutes or until tender. Add bacon during last 10 minutes of baking. Makes 8 servings.
