Ingredients

  • 1

    cup (8oz.) ranch dressing

  • 1/2

    cup sliced green onions

  • 1/2

    tsp. dried dill or 1/4 cup fresh dill

  • 1

    tsp. Dijon mustard

  • 3

    hardboiled eggs chopped

  • 1/2

    tsp. salt

  • 1/4

    tsp. pepper

  • 3

    lbs. red bliss or new potatoes cooked and cut into large chunks

Directions

1. Wash potatoes and cover with cold water in large pot. Add 1 tsp. salt and bring to a boil. Reduce the heat, cover, and simmer until the potatoes are tender (about 20 mins). Drain and then rinse in cold water. 2. In a large salad bowl combine all ingredients except potatoes. Add warm potato chunks, cover and chill.
