Roasted Shrimp with Ginger

Ingredients

  • Marinade
  • 1/4 cup light soy sauce
  • 1 tsp. peeled and grated fresh ginger
  • 1 garlic clove, minced
  • 1 Tbsp. canola oil
  • 1 Tbsp. honey
  • 1 lb. large fresh or frozen peeled and deveined shrimp (if using frozen, defrost and pat dry)

Preparation

Step 1

Preheat the oven to 500ºF. Combine the marinade ingredients in a bowl. Add the shrimp and let marinate for 5 minutes.

On a large baking sheet, add the shrimp in a single layer with some space in between each one. This will allow the shrimp to roast rather than steam. Discard any leftover marinade.

Roast the shrimp for about 7 minutes or until they turn pink and are cooked through.

Serve the shrimp over a salad, warm or at room temperature.
