Ingredients
- 1 1/4 C yellow corn meal
- 1/4 C unbleached flour
- 2 t sugar
- 3/4 t baking powder
- 1/4 t baking soda
- 1 t salt
- 1/3 C chopped onion
- 1 egg
- 1/4 C water
- 1/2 C buttermilk
- oil for frying
Preparation
Step 1
1. Preheat oil to 375 F.
2. Combine dry ingredients in medium bowl. Blend well. Add onions, egg, water, and buttermilk. Stir just until moistened. Let dough sit for 5 minutes.
3. Drop by rounded teaspoonfuls into hot oil and fry until dark golden brown (approx. 2 minutes), turning once.
4. Drain on paper towels.
