Pesto Shrimp Skewers

Ingredients

  • 8 wooden skewers, soaked in warm water
  • 24 medium shrimp, peeled and deveined, with tails on
  • Kosher salt and pepper to taste
  • 1/2 cup pesto sauce

Preparation

Step 1

1. Season shrimp lightly with salt and pepper. Thread each skewer with three shrimp, and coat well with 1 tablespoon of the pesto.

2. Grill on medium for 1 minute on each side, or cook on grill pan over high heat for 2-3 minutes on each side.


Delicious and couldn't be simpler! Used the CL Classic Basil Pesto, which I'd frozen and then thawed. Used as an entrée with a couscous/basil/fresh mozzarella/tomato salad, which was perfect - these would also be good as an appetizer.
