Italian/French Bread/Rolls

Ingredients

  • 2 1/2 Cups Warm Water
  • 4 1/2 tsp Yeast (2 packages)
  • 1 1/2 Tbl Brown Sugar
  • 7 Cups Bread Flour
  • 1 Tbl Salt
  • 2 Tbl Olive Oil
  • 1 Egg (Separate and add few drops of water to whites)

Preparation

Step 1

Mix Warm Water, Yeast and Brown Sugar in mixing bowl

Mix Salt in Flour and add 2 cups and mix well

Add Oil

Add 1 cup of flour at a time until firm and not real stick

Transfer to greased bowl cover with plastic wrap and let stand in room temp and let rise to double its size (about an hour)

Punch down fold into itself a couple of times and put back in bowl and cover and let rise again.

Preheat oven 375

Split into two loaves and roll out on floured surface. Roll into long loaf and brush with egg wash (sprinkle with sesame seeds optional). You can also cut and shape for dinner rolls or make great hoagie rolls.

Bake with a pan of boiling water in bottom of oven. Remove after 20 minutes brush again with egg wash and finish until golden brown about 20 more minutes.
