Biscotti - Almond - Joyce

Ingredients

  • 2 1/4 cups flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 tsps almond extract
  • 1 1/3 cups slivered almonds

Preparation

Step 1

Pre heat oven 350

Sift flour, baking powder, salt in medium bowl

Place eggs and butter in large mixing bowl. Beat about 2 minutes until light and fluffy.
Add vegetable oil and almond extract until oil is incorporated and mixture is thick and smooth.
Beat in flour mixture, dough will be quite thick.
Add nuts by hand if necessary.

Turn dough onto floured surface. Flour fingers and divide dough in half.
Transfer to parchment paper cookie sheet.
Mold into smooth log 14 inches long, 2 1/2 inches wide and 3/4 inch high.
Repeat with second piece of dough. Place 2 inches apart.

Bake for 30 minutes, until light golden brown and slightly puffed.
Remove pan, using serrated knife cut in 3/4 inch slices on diagonal.
Arrange slices, leaving 1 inch between cookies.
Return to oven and bake 10 minutes longer, until browned.
Transfer to wire rack.

My logs are never that exact size, but I'm sure you can figure it out. I've added candied fruit, dipped them in chocolate, etc. Very easy recipe. Let me know what you think!!
