Traditional Scones

Classic with dried currants for great flavor

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 Tbs baking powder
  • 1/2 tsp salt
  • 1/2 stick cold unsalted margarine, cut to pieces
  • 1/2 stick cold uns. butter, cut to pieces
  • 2 lrg. eggs, beaten lightly
  • 1/4 cup plus 2 Tbs milk
  • 2/3 dried currants

Preparation

Step 1

Preheat to 425
Grease large baking sheet

In a bowl whisk flour, sugar, baking powder, and salt
with pastry blender or fingers blend in butter and margarine until resembles coarse meal
stir in eggs, 1/4 cup milk, and currants until just combined

Turn dough out onto floured surface
knead gently until ingredients are well incorporated

Roll dough out to 1/2" thick, 10" diameter round
use 2" round cutter or flour rimmed glass to cut as many as possible
transfer to baking sheet
brush with remaining milk
bake in center of oven 15 min.until golden
