ST. Olaf's Swedish Meatballs

Old Norwegian Lutheran Church recipe.

Ingredients

  • 2 pounds ground chuck
  • 1/3 pound ground pork
  • 1/2 cup crushed saltine crackers
  • 1/4 cup onions chopped
  • 2 eggs beaten
  • 1 1/4 cups milk
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ginger minced
  • 1 tablespoon salt
  • 1 teaspoon ground white pepper
  • flour to coat meatballs
  • 4 tablespoons each butter and shortening
  • 2 cups beef stock
  • 3 tablespoons roux (equal parts flour and butter combined over heat to brown color)
  • 1/2 cup cream

Preparation

Step 1

Combine all ingredients mix well by hand.
Shape into meatballs the size of a walnut.
Roll each in flour and sauté in butter, shortening combo till browned.
Add roux to pan drippings, stir in beef stock to thicken, add cream.
Pour finished gravy over meatballs, cover and bake for 40 minutes in a 300 degree oven. Serve and enjoy.
