Ingredients
- 1 small shallot, finely diced
- 2 tsp Dijon mustard
- 2 TB red wine vinegar
- 1/2 cup olive oil
- salt and pepper
- 1 TB fresh herbs, finely chopped (opt)
Preparation
Step 1
Combine shallot, mustard, and vinegar, in a mixing bowl. While constantly whisking, add oil in a slow, steady stream until the vinaigrette emulsifies. Season with salt and pepper. Stir in herbs, if desired.
Makes 3/4 cup.
