Baby Kale & Orange Salad

Ingredients

  • For dressing:
  • 6 roasted baby golden beets
  • 5 oz. baby kale cut in wedges
  • 1 pint grape tomatoes halved
  • 1 fennel bulb sliced thin
  • 1 large avocado cubed
  • 2 segmented oranges
  • 3 Tbsp tangerine juice
  • 2 tsp sugar
  • 1 tsp cider vinegar
  • 1/4 tsp Dijon mustard
  • 1 minced garlic clove
  • Salt & pepper to taste
  • 5 Tbsp canola oil

Preparation

Step 1

Combine all salad ingredients in large bowl.
In blender, combine dressing ingredients adding canola oil slowly at the end.
Pour dressing over salad & toss.
Sprinkle with fennel fronds & cracked black pepper!
Serves 6 -8 as side salad
